Latham School’s festive Valentine’s Day dinner

Our staff participated in the annual Valentine’s Day dinner for our students on Thursday, February 14th. Thanks to Chef Paul Donahue and his culinary team – and all of our staff volunteers, the dining experience was an extra-special celebration for our special group of students.

Volunteer staffers set up the dining area on campus with decorations and festive table cloths, and students were encouraged to dress up for the occasion. Throughout the day, students gave valentines to one another and staffers, and everyone was excited for the day to culminate with a scrumptious dinner in celebration of friendship at Latham. Staff from the Admissions, Residential, and Clinical teams served three courses to the students. The meal began with a beautiful butternut bisque with a crème Fraiche heart, followed by a BBQ pulled pork pie topped with mashed sweet potato served with buttered Brussels sprouts. The menu also included a delicious chocolate brownie sundae. Students weren’t sure which part of the meal was their favorite – the soup, pie, or sundae!

Valentine’s Day is one of several “treat days” at Latham; we integrate festivities with our meal plan to make holidays memorable and fun. Latham Centers shares more information about how we manage “treat days” in concert with our meal plan in our Living Healthy with PWS cookbook (click here to view the cookbook web page). Stay tuned for the Living Healthy with PWS cookbook supplement to be published this spring – we’ll highlight recipes such as the butternut bisque in this seasonal-themed recipe book written especially for our Prader-Willi community.
