‘A Bright Future’ PWS conference speakers to present on Optimal Nutrition

On June 1, 2019, “A Bright Future” conference speakers Melanie Silverman and Paul E. Donahue, Jr. will present on Optimal Nutrition for individuals with Prader-Willi syndrome.

The trending Mediterranean style diet, low in carbohydrates and dairy and high in omega-3, is ideal for individuals with PWS. In 2016, a new Mediterranean style menu for the residents at Latham Centers was created by Melanie Silverman, Registered Dietician; Paul Donahue, Latham Centers’ Head Chef; and Patrice Carroll, LCSW. Within the first year, Latham residents’ combined weight loss totaled over 400 pounds; calorie counts increased; and motivation to exercise improved.

In this conference session on Optimal Nutrition, attendees will learn more about the benefits of a Mediterranean style diet for someone with PWS, as well as specific case studies of Latham residents and their weight loss / healthy living stories.

More about Melanie:

Melanie Silverman, MS, RD, IBCLC, is a registered pediatric dietitian (RD) and board-certified lactation consultant (IBCLC). She has a Bachelor of Arts in Chemistry and Spanish from Indiana University and a Master’s degree in Clinical Nutrition from Rush-Presbyterian St. Luke’s Medical Center. Melanie began her career as a clinical dietitian at the University of Chicago Medical Center in 1998. She began intensive work in PWS in 2004 and has presented at many national and international PWS conferences on optimal nutrition for patients with PWS. She continues her work with families in PWS and is also the Chief Clinical Officer for a telemedicine app called Pacify.

Paul Donahue has been cooking in fine- and casual-dining restaurants for over 30 years. Soon after he became Head Chef at Latham Centers in 2014, he realized his true passion was in channeling his enthusiasm for cooking into changing lives for people with Prader-Willi syndrome. He creates an ever-changing menu based on collaborations with staff and experts, as well as regular interaction with residents about their likes and dislikes. He has become a “celebrity” to our students.
