If you stay up to date with our blog you’ve heard of Chef Paul. He is the Head Chef on campus and has created many a HEALTHY feasts for our students since coming to Latham Centers in 2015. Students have always looked forward to meal times, however, now meal times take on a new meaning. Students are eating new and healthy foods that they would have never been exposed to, and have a working knowledge that healthy food can be tasty food as well!
This year Chef Paul is creating a Valentine’s Day Dinner that students and staff are highly anticipating. Not only is the menu healthy, but students have options. As is tradition, staff will be serving the students, and they will eat on nice white linens.
Each student will have the option of having a fresh dinner roll as well as sparkling water. Course one offers students the choice of a chilled strawberry soup with homemade whipped cream or Italian bruschetta. Course two includes a mixed green salad with strawberries, raspberries,blueberries and raspberry vinaigrette or caesar salad with croutons, parmesean cheese, bacon bits and caesar dressing. Course three offers baked stuffed cod with shrimp stuffing and lemon butter sauce, grilled asparagus and rosemary roasted potato or grilled chicken breast with tomato, artichoke, olive oil and caper salsa, grilled asparagus and rosemary roasted potato. Finally, for dessert, Chef Paul is offering a peach cobbler with whipped cream or a mixed berry cheesecake.
I don’t know about you, but this sounds like a meal that I would want to attend!
