Student’s Celebrate St. Patrick’s Day with a Traditional (and Healthy) Meal!

Head Chef Paul and his crew have been busy at work planning tomorrow’s St. Patrick’s Day Feast. Latham Centers staff see St. Patrick’s Day as an opportunity to teach students about Irish history and traditions in the classrooms and dining room!
If any of you readers are Irish, I’m sure some of these items will hit home!
Starter: Irish Soda Bread (with optional Margarine)
Appetizer: Spinach Salad with Cucumbers, Leeks and Pickled Cabbage
Entrée: Corned Beef and Cabbage with Baby Carrots and Broiled Potato
Dessert: Celtic Cupcakes!
